Sweet Potato Soufflé

Soufflé:

3 cups canned, cooked sweet potatoes
½ cup brown sugar
½ cup butter
2 eggs beaten
1 tsp. vanilla
1/3 cup milk
¼ tsp. cinnamon
¼ tsp. nutmeg

Topping Mix:

½ cup brown sugar
¼ cup flour
½ cup butter (don’t melt butter – cut into pieces)
½ cup nuts

Mash sweet potatoes. Add other ingredients. Put in a pretty pie pan. Add topping and bake at 350 for 25-40 minutes – time varies depending on how deep your baking dish is.

I like to use this one:

  1. Are you bringing this to Thanksgiving? Looking forward to seeing you guys! Love you!

You betcha! Bought all my ingredients (from Whole Foods :) ) Ready to cook it up!

  2. Yummy!

  3. The best EVER! It’s good cold too…had a bite or two or three one night on a food binge. :P Have a wonderful Thanksgiving with your family. God bless you.

  4. Yum – that is a delicious dish and we’ll be eating it at our annual “American Thanksgiving” dinner up here on PEI.

  5. This is a wonderful dish. I have tried making it, but mine turned out a little thin/runny. Any suggestions?

    Have a blessed Thanksgiving!

Scotti – Happy Thanksgiving! If it is turning out runny, you need to increase the yams and bake it a little longer. Make sure when you put it in the pan that it is thick enough that you can’t pour it in the pan, you actually have to spoon it into the pan. Hope that helps!

  6. Sweet Potatoes are my favorite food this looks so good if only I could have some right now! Also, Happy Thanksgiving!
